Dirk was born in Canada and raised in Holland. He completed his formal training in The Netherlands and worked alongside Kees Helder – one of Hollands’ most celebrated Chefs and owner of the 3 Michelin Star restaurant - Parkheuvel.

Dirk returned to Canada and began to hone his craft at some of the finest kitchens in Toronto, including the Four Seasons Hotel Truffles Restaurant, The King Edward Hotel, Winstons Restaurant and The Prince Hotel.

Dirk joined The Waterside Inn as Executive Chef in 2001 and leads his talented team in creating innovative seasonal menus for Mississauga’s highest rated restaurant – Breakwater Restaurant (4 Diamond CAA/AAA; 3 stars Toronto Life and Wine Spectator Award of Excellence) as well as the production of a la minute dining in the more than 5,500 square feet of banquet space catering to weddings, socials and corporate events.

Dirk resides in Toronto with his wife and two children.
